Mountains, borderland history, and gypsum dunes

Walk the Organ Mountains and Old Mesilla on the first full day; cross San Augustin Pass for White Sands on the second.

Keep the city-and-mountain day on the west side of the San Andres–Organ divide; cross San Augustin Pass only for the White Sands day.

Arrival

Choose downtown or Mesilla for the first chile dinner.

Check in, then start with Si Señor for New Mexican plates or pair a Main Street walk with D.H. Lescombes downtown.

Day 2

Walk below the Organ Mountains before the heat builds.

Walk at Dripping Springs in the morning, stop for lunch, and spend the afternoon on the Old Mesilla Plaza and surrounding adobe streets.

Breakfast

Eat near the hotel before Dripping Springs.

Eat near the hotel, fill water, and reach Dripping Springs before the exposed ground heats up.

1:30 PM

Afternoon

Walk Old Mesilla after lunch.

Start on the Plaza, read the town's historical interpretation, and continue through the surrounding adobe streets before dinner.

Day 3

Give White Sands its own full day.

Check park and Highway 70 conditions before leaving Las Cruces, then keep the day inside the gypsum dunefield rather than repeating Old Mesilla.

Breakfast

Eat near the hotel before driving east.

Choose breakfast according to current opening hours, fill water, and leave Las Cruces with food for a park that has limited services.

1:30 PM

Afternoon

Leave the park with enough daylight for US-70.

Eat and drink before the return, clear sand from footwear, and reassess wind, weather, highway conditions, and driver fatigue.

6:30 PM

Dinner

Choose dinner near the hotel after the return.

The drive back over San Augustin Pass can run late. Check current hours and keep dinner close to the room.

Departure

Main Street or the university before departure.

After breakfast, choose a downtown museum or a short New Mexico State University campus walk according to the departure time.

9:00 AM

Departure morning

Start with a chile breakfast near the hotel.

La Nueva Casita Café is a breakfast-and-lunch option in the Mesquite Historic District; otherwise choose a bakery or coffee stop close to checkout.
